Eggplant Pepper

My mom wanted me over for the weekend since I didn’t spent my birthday with them last weekend so to make it up I am at her house for the weekend. On my way to my parent’s house I decided to take the small roads so I can enjoy the beautiful country scenery. I have to say Georgia has the most beautiful country roads that I’ve driven on thus far. I loved and enjoy the winding roads and the beautiful country prairie as I drive from Winder to Hartwell Georgia.

As always when I am at my parent’s place it means lots of good food and fresh veggies. When I arrived at my parents place as a good daughter (LOL) I cooked for my parents as they tend to their garden. My mom wanted me to make some egg plant pepper so since my mom just picked some from her huge garden I decided to do as my mom wish, egg plant pepper. These are one of my favorites too make, quick and easy and and super yummy too!!!!

First make sure you use a folk or a knife to poke some whole or slid some opening into the eggplant and then bake/broil it in the oven until its nice and cooked.

Make sure you also broil some green onion as well.

Chop the green onion into little pieces and put it in a mortar paddle.

It’s easier to smash your pepper first, I like it spicy so I put a lot of pepper in it, smash it and then add the green onion and smash it some more.

then make sure you peel the cooked eggplant and then use a folk to rake the eggplants into the mortal paddle and start to  mix/smash it well. Don’t forget to add salt!!!!!

The finished product!! YUUUUUMMMMMY!!!!!!!!!!!!!!!!!!!!!

    oy, cooking again. Why not buy or ordered in!

      Patty, I don’t see the reason to buy or order in when you can make your own food. When I am not so lazy I find joy in cooking. And cooking your own meal is so much cheaper and yummier than ordering or buying.
