Lao Jeow Hed Chicken

First off, I gotta say Thanks to Nye Noona for her awesome recipe for this dish. This dish consist of mushroom, grilled chicken and a few other herbs and spice for seasoning. It took me a good 2  hours to complete this dish, but the end result was well worth it! It took me a bit longer because I just found out that one side of our oven is dead, so I’ll have to call my dad to replace one side for a new one now. But it’s no big deal, my dad should be able to fix it.

Nye’s ingredent for Lao Jeow Hed Chicken(as always, I’ve always end up changing a few things since I do not follow directions very well:

3 strips of chicken breast, grilled and roughly chopped
2 oz of gourmet blend mushroom, grilled and roughly chopped
6 chili peppers, grilled and roughly chopped
3 garlic cloves, grilled and roughly chopped
3 Asian shallots, grilled and roughly chopped
3 green onion stalks, grilled and roughly chopped
½ inch piece of ginger, finely chopped
Cilantro, finely chopped
1 tablespoon of vinegar
2 tablespoons of lime juice
2 tablespoons of fish sauce
1 tablespoon of shrimp paste, grilled
1 teaspoon of brown sugar

First I put the chicken thigh in the grill and grill it

I cut it into little bite size pieces

The other stuff I’ll have to grill after the chicken (don’t forgt to grill the chilli too). Well do not grill the ginger and lime, but grill everything else, including the shrimp paste (sorry no pictures).

These are the yummy oyster mushroom, make sure you cut theminto thin pieces so grilling them will be a lot faster

once the grilling is done, cut them into small bite size

I also grilled these mustrooms as before, as before cut them into thin pieces.

Then I’ve also grilled the green onions, shallots, garlics and chilli pepper.  

use a mortar and pestle to mix the grilled onion, shallots, garlic, pepper and shrimp paste first, then once that is ready i put in all the other stuff minus the chicken.

I then put everything else in a large bow and mix it with the chicken.

And here is the awesome and yummy finished product!!! Served with Sticky Rice!!
