Shrimp, Corn and Banana Fritters

I have to say much Thanks to the little teachew blog, I had taken this amazing recipe from there and I am enjoying every bite of this awesome dish!

I kinda sorta followed her direction (I do not follow directions very well) and I think it came out pretty good. I had been wanting to make this dish, but haven’t been able to, but I was finally home early enough to make this dish and I must admit, every moment making this dish was well spent! All I can say was, I loved it!

(ingredients are from The Little Teachew, when I made mine, I slightly altered the recipe since I don’t follow direction very well as I’ve already admitted to)

150g fresh shrimps (shelled, deveined and chopped into small chunks)
- 2 ears sweet corn (peeled, washed, kernels removed from cob)
- 2 shallots (peeled and chopped)
- 1 stalk spring onions, chopped
- 1 red chilli (seeds removed, sliced or chopped)
- 2 ripe bananas, cut into small chunks If you are unsure about liking the bananas you can go without it!
- 300g flour
- 1 tsp baking powder
- 375 ml water
- Oil for deep-frying
- Salt, to taste
- Pepper, to taste

Shelled and then cut your shrimps into small bite sizes

cut your shallots, green onion, cilantro, bananas, corn and shrimp

mix the flour, baking powder, chilli and salt together then add water

add the corn, shrimp, and chopped goods to the ingredient and mix well

add oil to your frying pan wait until the pan is hot before you start to add any of the batter in. fritter is ready when both side is lightly browned.

Enjoy!! It’s super easy and yummy!!!

    Your fritters turn out really good. You got the right shape. Mine was strange looking. I think because I had used a deep fryer. Good job.
