Coconut Pancake Wrapped Banana

First off, I wanted to say Thanks to My Asian Kitchen for the amazing recipe. I love anything coconut, and with banana, that’s a plus! I followed her instruction as good as I can, hence I don’t follow directions too well. I measure everything as good as she had said and what not, the only difference is the type of flour I had used. She had asked for all purpose four, I thought I had some left, but it happened that I had ran out but I could had sworn I just bought a new pack, well guess not. Anyways… Instead I had used my favorite, Glutinous Rice Flour instead of regular all purpose flour.
First I put all the ingredients together into a large bowl
Ingredients are: Rice flour, sugar, salt, water, coconut milk, baking powder and eggs. Mixed well and then I am ready for the cooking part.
Ingredients:
1 1/2 cup all purpose flour
200 ml water
400 ml coconut milk,or I can
1 cup sugar
1 tsp salt
1 tsp baking powder
3 large eggs,room temperature
some oil for greasing the pan
some pieces of ripe bananas
I used a flat pan, greased it with oil and then pour a little of the mixture into the pan, let it sit on heat until it is brown then turn it over and wait until it is brown, once that is done, I break the banana in half and wrap the banana with the coconut pancake that I had just made.
This dish is as super yummy dessert if you love coconut and bananas like myself…
Another Great way to eat this dessert is, when once it’s done wrapping you can microwave it until the banana is a little soft, it’s super yumy that way too!

That pancake actually look good. I never thought of making it that way. Mrs Dallas just wrap them in eggroll sheet and fried. I have to try this out.
